Spring Fling Cocktail (with Empress Gin)
My friend Erin and I have been swooning over this purple gin for quite some time, and we finally got it to make some pretty purple cocktails. We made two the day I got the gin, this was my favorite of the two (although both were darn good).
Makes 1 drink.
Ingredients:
- 2 oz Empress Gin (I used Victoria Indigo Gin as it's the same but less expensive)
- 1 oz pomegranate juice
- 1 slice of grapefruit
- 3 oz Seltzer water (or tonic for a more powerful taste - honestly I was out of seltzer but tonic worked well, so feel free to do either) - also can sub grapefruit selzer water for both the seltzer and grapefruit slice.
- Lemon or Lime wheel to garnish
Instructions:
- Fill a glass with ice (ideally a 10 oz glass)
- Add pomegranate juice, squeeze slice of grapefruit into class then discard. Top with seltzer water.
- Gently pour the gin on top. Garnish as desired.
Notes:
- I already needed grapefruit for the other drink and wasn't going to buy a grapefruit and grapefruit seltzer. A squeeze of grapefruit along with normal seltzer or tonic worked very well. But you can also use grapefruit setlzer, whatever works for you!
- The original recipe says to actually use pomegranates to make fresh pomegranate juice. That seemed like a lot of work (and I'm honestly not sure how to juice a pomegranate... Just scoup out some arils and then squish them? I suppose Google could tell me). They suggest this stating the juice is too dark. I decided to do the bottled juice, because, I donno, I'm busy. Anyways, indeed the color was darker than the one on the original recipe, but I think it still looks pretty cool. I think the dark is fun for winter and the light colored one would be pretty in spring. If I get motivated to juice a pomegranate this spring I'll update...
