Sage Bee's Knees



Tried making a bee's knees in the past and the honey just sank to the bottom and never mixed in correctly.  This recipe solved that problem.  Also used up the extra sage left over from a recipe. 

Ingredients:

  • 1/2 cup honey (to make syrup)
  • 1/2 cup water (to make syrup)
  • 1 1/2 oz gin
  • 1/2 oz honey syrup
  • 1/2 oz lemon juice
  • 3 sage leaves (divided)

Instructions:

  1. Make honey syrup by simmering the honey and syrup in a small saucepan until the honey dissolves. Add a sprig of sage for a more intense sage taste if you like. Let cool.  Will make several cocktails worth, so store in a seal-able container.
  2. Combine syrup, gin, lemon juice and 2 sage leaves in cocktail shaker with a generous amount of ice.  Shake well. Pour
  3. Garnish with remaining sage leaf.  The original recipe says to slap the leaf before you put it in. Theoretically this breaks some of the molecular structure so it has a stronger smell and taste? Felt a little weird slapping a leaf though, I admit.
