Strawberry Rhubarb Gin Refresher

This is possibly the best cocktail I made all summer! 

This was altered from a recipe for a Gin Ricky, but a Gin Ricky is supposed to be a drier, less sweet Gin and Tonic.  Considering I put a lot of simple syrup in this, I would no longer call this a Gin Ricky.

With guest drinkologist: Erin.  Makes 2 beverages.

Ingredients:

  • 2 Strawberries (could increase to 4 for a more potent strawberry taste)
  • 1 part simple syrup (I'm guessing the container we used was 4 oz)
  • 1 part rhubarb infused gin
  • 1 part lime juice
  • Club soda to taste

Instructions:

  1. Muddle strawberries in cocktail shaker. (if you like chunks in your glass you can muddle in glass)
  2. Combine simple syrup, rhubarb gin, and lime juice with ice in cocktail shaker. Shake
  3. Pour equally into each glass. 
  4. Top with club soda to taste.
Note: We ran out of strawberries but wanted a second beverage, so we subbed pineapple for strawberries.  It was also delicious with pineapple.
