Hibiscus, Basil, and Lemongrass Iced Tea

This was my first time making an iced tea not from tea bags.  It's refreshing, flavorful, and very different from other iced teas I've had.

Ingredients:

  • 7 cups water
  • 1 lemongrass stalk thinly sliced
  • 1/4 cup honey
  • 1/2 cup dried hibiscus flowers
  • 3/4 cup loosely packed basil leaves (more for garnish if you like)
  • 1/4 cup lime juice

Instructions:

  1. Bring the water to boil in a medium to large pot.
  2. Remove from heat and add lemongrass, honey, hibiscus, and basil.
  3. Let steep for 20 min.
  4. Strain into a pitcher.  Press with spoon to get all juice. Discard used lemongrass, hibiscus, and basil.
  5. Let cool and add lime juice.
  6. Refrigerate
  7. Serve over ice and with basil if desired.
*I forgot to add the lime juice at first.  It tasted well with and without the lime juice.
