Pina Colada


Can't go on vacation and get tropical drinks? Make it at home!   

Makes 2 drinks 

For the full tropical experience, drink with Pina Colada Cream Pie from Cooking with Doyle

Ingredients:

  • 1 Cup frozen pineapple chunks (I am very partial to fresh over canned)
  • 2/3 cup canned coconut cream
  • 1/2 cup pineapple juice
  • 3 oz gold rum (I was out of gold so I used white and it was still good, but I think gold is best)

Instructions:

  1. Place all ingredients in blender or use emulsifier.  Blend until relatively smooth.
  2. Pour, and garnish with fresh pineapple or maraschino cherries.
